Recipe:

Strawberry-Peach Chicken Salad

•Strawberry Yogurt Dressing 2 containers (6 oz each) Yoplait® Original strawberry yogurt
•1 cup sliced fresh strawberries
•2 tablespoons red wine vinegar
•Salad
•6 cups Bibb lettuce leaves or mixed salad greens
•1 lb boneless skinless chicken breasts, cooked and cut into strips
• 1 cup sliced fresh strawberries
• 1 medium peach, peeled and sliced
• 2 medium green onions, sliced (2 tablespoons)
•Directions 1. In blender or food processor, place yogurt, strawberries and wine vinegar. Cover; blend on high speed about 15 seconds or until smooth. 2. Arrange remaining ingredients on 4 serving plates. 3. Serve with dressing. Cover and refrigerate any remaining dressing.

Birthdays






It was nice to be back in Caldwell, even though it was only for a short time. It was nice to see some of our friends and family. We are sad that we didn't get to see all of them.

Foospiration May 21

THOUGHT:

RECIPE:
Chicken Tortilla Casserole

•1 doz. Corn tortillas
•½ c milk
•1 T minced onion
•1 can cream of chicken soup
•1 can cheddar cheese soup
•½ lb Monterey Jack cheese
•1 c sour cream
•1 lg can diced green chilies
•4 c cubed cooked chicken
•½ tsp garlic salt
•1 c chopped olives
•Tear tortillas into bite size pieces, fry until crisp. Remove and drain. Soak onions in milk for 5 minutes. Add soups, sour cream, green chilies and garlic salt. Arrange half of the tortillas and half of the meat in a 9 x 13 inch dripper pan. Cover with half of the soup mixture, sprinkle with half of the grated cheese and olives. Repeat, ending with the cheese. Bake at 350 for 30 minutes. Serves 8 generously.

Out of the mouth of babes.

Well the other night we had hot dogs for dinner and Shaunee asked if hot dogs were the hangy down part on cows that the milk comes out. LOL

Justin has been talking about good guys and bad guys and heaven for some reason. Last night he had gone with his aunt Karla to her school where she teaches and on the way home he was asking about bad guys. Well he gets home and sits down on my lap and asks if we are going to heaven tomorrow. I said, "No we weren't going to heaven for a long time." He then asked me " Does everyone go to heaven?" I said, "Yeah." Well his comment to that was "Good guys go heaven" and in a very serious voice said, "Bad guys go to hell." Where he learned that I have no idea.

City Of Rocks--Almo, Idaho



At the beginning of the month we went the City of Rocks in Almo, Idaho. Grandma Lainey came and spent the weekend with us and we took her there, as she had never been. Grandpa Rick was supposed to come, but he had to work. We had a lot of fun climbing on the rocks and exploring. We climbed up on "bathtub rock" and we saw the Twin Sisters, Elephant rock, and a lot more. It was fun to see cactuses.

Thought and recipe May 14

RECIPE:

Caramel Brownies

•1 German chocolate cake mix
•½ cup plus 2 T. butter or margarine, melted
•2/3 cup evaporated milk
•1 cup semi-sweet chocolate chips
•1 (14 oz.) bag caramels
•1 cup chopped pecans
•Mix dry cake mix with butter and 1/3 cup of the evaporated milk. Pat half the dough into bottom of a 9x13 inch pan. Bake at 325 for 6 minutes.
•Sprinkle chocolate chips over dough in pan. In a saucepan, heat caramels and remaining evaporated milk; stir until creamy. Pour caramel mixture over chips and dough in pan.
•Mix ½ cup of the chopped nuts into the remaining dough. Drop dough by spoonfuls over caramel mixture. Sprinkle remaining nuts on top. Bake at 325 for 18-20 minutes. Let sit until cool before cutting into bars.

Kids say the darnst things continued.........

The other day we were driving through a small town and we were on the outskirts of it and a dog ran out in front of me and I had no time to react......Well I said, "Dang it" and Shaunee asked me what was wrong and I told her that I just hit a dog. She asked. me if I hit it on purpose and I said, "Of course not", and she said, "Nice speed bump huh."

Last night we went to Albertsons to get the awesome deal on cereal they had and Shaunee wanted me to carry her and I told her that I couldn't carry her as my back hurt and she said, "I think that your back hurts cuz you have one big zit. LOL

Last night on the way home from the store I was talking to Karla, Joe sister and asked her if Joe was hard on shoes when he was little ( Just bought Justin a pair of new shoes and already need to buy him new ones). She said that she doesn't know about Joe, but Jana was and still is hard on shoes. Shaunee in a very loud voice says, "Jana steeled shoes."

Recipe:
Apple Snickers Salad

5 Medium Granny Apples (cut into bite size pieces)
1 King Size Snickers Bar (freeze –then put into a Ziploc
freezer bag and hit into pieces with a hammer)
1 Small Cool Whip
Mix altogether and serve.

Happy Birthday to Justin!

It is hard to believe how fast time flys. Justin turns 4 today. When I was pregnant with Justin, we were living in Joe's parents house in Elba, Idaho while they were on their mission. Joe was working for Simplot in Caldwell, ID and would come home on the weekends. My pregnancy with Justin was pretty easy, except as usual I was a nervous wreck. Towards the end of the pregnancy I was getting nervous because I wasn't feeling him move like I thought I should. They ended up doing an amneio. to see if his lungs were developed enough. They were and he was born May 6, 2004 and 7:32 AM and weighed 9lbs. He was three weeks early and weighed 9 lbs. He is a fun boy! He is into Cowboys, transformers, "Cars", Spider man, and whatever it is he is thinking about that day. Happy Birthday Justin!
