Foospiration May 21

RECIPE:
Chicken Tortilla Casserole

•1 doz. Corn tortillas
•½ c milk
•1 T minced onion
•1 can cream of chicken soup
•1 can cheddar cheese soup
•½ lb Monterey Jack cheese
•1 c sour cream
•1 lg can diced green chilies
•4 c cubed cooked chicken
•½ tsp garlic salt
•1 c chopped olives
•Tear tortillas into bite size pieces, fry until crisp. Remove and drain. Soak onions in milk for 5 minutes. Add soups, sour cream, green chilies and garlic salt. Arrange half of the tortillas and half of the meat in a 9 x 13 inch dripper pan. Cover with half of the soup mixture, sprinkle with half of the grated cheese and olives. Repeat, ending with the cheese. Bake at 350 for 30 minutes. Serves 8 generously.

MMM, sounds yummy, a little like chilaquiles! I may have to make that without the chicken!
